bran muffins for diabetics

2 cups bran
2 tablespoons oil
2 eggs
1 egg white
1 teaspoon salt
¼ tablet saccharine (1/3 grain)
¼ teaspoon cinnamon
Water
Separate egg whites from yolks. Beat whites stiff. Add slightly beaten yolks, then cinnamon, salt, and saccharine dissolved in a little water. Add oil slowly, then washed bran and water. Place in greased muffin tin and bake 20 to 30 minutes in a moderate oven.
