chicken stir fry

2 cups white rice (or brown rice)
1 green bell pepper
½ yellow bell pepper
½ red bell pepper
1 onion
2 tablespoon Salt
1 tablespoon Butter (optional)
2 tablespoon garlic powder
2 tablespoon lemon pepper
2 cups water
3 boneless chicken breast
Gravy
2 cups Chicken broth
2 tablespoons Sour cream
Boil rice in a pot full of boiling water for 20 mins, then drain and add butter and salt. Cut up
peppers and onions into strips. Add water, chicken breasts, peppers, and onions to a pan and
let it cook on medium heat. After approximately 5-10 mins add garlic powder, lemon pepper, and
salt, then begin to cut up chicken into bite sized pieces. Continue to cook until water almost
evaporates, then add chicken broth. Add sour cream and continuously stir until it forms a gravy
(add more sour cream if necessary for desired consistency). Once gravy is formed, continue to
cook for additional 10 mins then remove from heat. Add 1-2 scoops of rice to a bowl, and top
with stir fry mixture, then serve.
