meringue cookies

3 egg whites
½ tsp cream of tartar
1 tsp vanilla extract
¾ cup granulated sugar
1.) Preheat oven to 275 degrees
2.) Separate room temp egg whites into bowl, careful not to get ANY fats, etc, into the egg whites
3.) whip egg whites until frothy, then add vanilla and cream of tartar
4.) Continue whipping, then slowly add in sugar 1 Tbsp at a time
5.) Whip until it forms stiff peaks, then either scoop or pipette onto a baking tray with parchment paper
6.) bake for 60 minutes, or until they begin to slightly turn golden
7.) turn off the oven, and leave the meringues in it as it cools
