oven-roasted herb potatoes
A family recipe contributed by Kenny.
- Select smallest redskin potatoes.
- Quarter redskin potatoes – lightly coat with olive oil (2 tablespoons to 3 pounds of redskin potatoes).
- Sprinkle fresh herbs (oregano, parsley, chives) and add a small amount of Sea Salt.
- Bake at 425 degrees for 30-35 minutes on cookie sheet.
- Serve either warm or cold (pat dry if served cold).
